brewing notes:
15/12/15 - this brew was made in lieu of my son being born as i knew i wouldn't be able to brew for a while! i've only recently begun fermenting it and plan on fining it in the fermenter. it's due for a taste and dry hopping soon. it was a last minute / in between brew so it got a name that made sense. i'm actually pretty excited for it. apart from the citra and strange dry hopping, it is similar to the tank attack ipa hop schedule. a few small tweaks for a change, and since i didn't have any simcoe or citra at home, i decided to dry hop with the leftover centennial and cascade i have.
22/12/15 - kegged today. tasted amazing from the fermenter so can't wait to taste it in a few weeks! also bottled a few 330mls for sampling or taking for christmas.
tasting notes:
16/12/15 - just taste tested this one and it's pretty good from the fermenter. threw in my dry hops and upped them to 100gm total. big hoppy beer! am looking forward to crashing and kegging this one in a few days.
12/01/2016 - have tasted this one over the past few days and it's VERY hoppy. i think the no-chill plus the 100gm of dry hops has really 'bittered' it up and given it a slickness. i don't mind it at all, but i still think it needs a week or two to really come into its own. fingers crossed it matures a bit more and those lovely rich and slick hop notes blend together nicely.
23/01/16 - having the last of this beer over the last few days and really haven't found it to be a firm favourite of my ipas. just a muddle of too many hops in my opinion. that and 100gm was probably way too much for a dry hop addition. will pull back on this next time as it has also clogged my dip tube. not a bad beer, but nothing stand out.
