20/04/15 - brewed up this guy today, with help from lyndal! was a very simple and easy brew; hit all my numbers and kept the temperatures up to make sure it was mashed true to 67C. looking forward to fermenting this in the shop soon and having it on tap there with the other beers!
30/08/15 - finally! after months of going overseas, uni assignments, moving house, and everything else that was thrown at me, i've finally pitched this guy! so excited. it's the first beer that i've fermented at my new place! i was going to limit the rate of yeast i'd be pitching into it as i had LOTS left over from version 2.0, but i thought stuff it, and threw all 200mL in there. will update with further information once i start doing tests.
tasting notes:
05/10/15 - have begun tasting this beer from a few days ago. really nice. low carbonation favours it, as you can really get an idea of the flavour depth. it finished a little lower than anticipated but i'm actually glad it did. i like a more sessionable thinner beer and this one certainly hits that spot. a beautiful amber colour too - she's just a very sessionable summer time aussie/english hybrid bitter; right up my alley.
overall, so far, i did prefer version 2 better, but with time this one might grow on me. i think i'm just not a fan of the flavour contributions of dark crystal (the only other change to this beer from the previous version save the higher mash temp). i'll re-brew this again and will likely substitute the dark crystal with melanoidin malt or munich, to see how that contributes to the grist. will post some pictures soon of how she looks - sexy.
