28/02/2016 - i am really excited to be brewing this today! it is version 2 of an all-amarillo ale i made a long time ago which turned out okay, but wasn't as good as it should be. here is hoping this version is better. the first change was simply not no-chilling it. secondly, i'm using trusty old us-05 rather than bry 97 which i believe ate through some of the hop character. thirdly, i'll be using nice fresh hops from the hop and grain brew store, not old ones which i think were part of the issue last time.
tasting notes:
16/03/2016 - kegged this one tonight and had a small sample. tasting very nice from the fermenter. added some gelatin and will sample again in a few weeks. am looking forward to this one. tastes really refreshing and not dissimilar to a james squires golden ale. also bottled the test beers with which i used coopers yeast to ferment and bottle them.
03/04/2016 - had a quick sample of the keg and it was good apart from a small taint of diacetyl. i've left the keg out at ambient temps as i've done before and will put it back in the kegerator in a few days time. i reckon she'll be a winner. subtle hints of amarillo were evident and overall it was very clean and 'fluffy' (in my mind) because of the wheat. yum! the real winner however is a small experiment i did with this batch, where i fermented about 1L with recultured coopers yeast at high ambient temperatures and no dry hopping. i then bottled them and let them condition and have just tried one. blow me down it is a very clean tasting beer. it has that unique flavour of coopers which (i believe due to the high ferment temperature and likely overpitch) has almost stolen the hop character away. all in all though, it is a really nice version of this beer and one which i might even do again on a larger scale.
17/04/2016 - i've been drinking this beer non-stop since i put the keg back in the kegerator fridge and it has been one of the most easy-drinking sessionable golden ales i've made. has really come into its own in the last week and i'm sad to say that the keg blew tonight! i'm positive with water adjustments i'll be able to get the amarillo to shine more but this beer was brewed to be a 'pub pale ale'; which, to my tastes, are often very lowly-hopped pale ales. i still enjoy them and this one really hit the spot. finally! i've made an amarillo beer which i've liked. i might make this one again down the track when it warms up again.
